Our 21 Year Old Cheddar has an extremely sharp, rich flavor and a crumbly, crystalline texture with significant calcium lactate crystals having formed during two decades of aging. We believe this is the best cheese Wisconsin has to offer. Pairs well with dark fruits, honey, sweet jams, stout beer, red wine, and bourbon.
